Ladybug’s Chicken Salad

Linda, one of our amazing hygienists, here at 12 Oaks Dental in Austin, loves to cook healthy meals and snacks.  Here is one of her takes of Whole Food’s Sonoma Chicken Salad.

2-3  Boneless Half Chicken Breast ( organic or natural is the best) ; boiled and cooled in the refrigerator-Then cube.

Add Cubed Chicken to the following mixture:

1/2 cup Whole Foods “365” Mayonnaise
2 tsp. Apple Cider Vinegar ( I use ‘Hengstenbreg’ Vinegar, seasoned with 13 fine herbs.
5 Tbsp. Honey ( Round Rock Honey is great )
 Then add:
1 tsp.     Poppy Seeds
2-3 Tbsp.Celery- diced in small pieces- because my husband does not like celery
1 to 1/2  Tbsp. Onion- finely chopped
2-3 C.    Red Grapes (I like a lot of grapes!)
1 C Fisher Sweet Glazed Pecans (Buy at Costco; usually close to the check out.  I put the container in the freezer.  When needed put the frozen pecans in a Ziploc bag and I use a little kitchen hammer to crush.)
